Lemon Delicious
On a very recent trip back to England, I spent a gorgeous morning with my lovely mother, who, when very young, lived in Sydney, Australia. Whilst over there, she learned many of their national dishes. This one in particular has become my absolute favorite pudding (dessert): Lemon Delicious. So delicious... it makes you giggle while you eat it. Please allow an hour to make it, but it's totally worth the effort! Enjoy:) Scroll down for the recipe at the end of the page.
This was a lesson in patience and science, every ingredient had to be weighed perfectly on my great grand mother's beautiful antique scales.
With all the sifting, beating, folding, and praying, everything turned out perfectly. If you're serving it for guests, though be warned you won't want to share, remember to wipe the edge of the bowl to make the edges clean and pretty. Serve it with fresh whipped cream and a dusting of confectioner's sugar .
Recipe serves 6 (or 3 greedy people):
-2 ounces butter
-6 ounces castor sugar
-2 rounded tablespoons (2 ounces) self rising flour* (sifted)
-1 pinch salt
-Rind and juice of 2 gorgeous lemons
-2 large fresh eggs (separated)
-1 cup whole milk
*combine 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt if you need to make your own
Directions:
-Cream butter and sugar together, add sifted flour and salt
-stir in grated rind of lemon and lemon juice, beaten egg yolks, and milk
-fold in stiffly beaten egg whites
-pour into greased large pie dish that is standing in a large dish of hot water that comes halfway up the pie dish
-bake at 350 degrees for 35-45 minutes
